Pre-cook – Blanching The Risotto Rice
A quick way to cook a risotto is by using blanched risotto rice. Arborio rice will take 20 minutes to cook from scratch. So blanching the rice for 8 minutes beforehand means the cooking time is reduced.
Ingredients
- Arborio rice
- Water or vegetable stock to blanch the rice
Blanching The Risotto Rice
- Bring the water to the boil
- Add the rice, and allow plenty of room for the rice to move around
- Cook for 8 minutes and drain in a colander
- Place the arborio rice in the fridge and chill before needed
