Pre-cook – Blanching The Risotto Rice

A quick way to cook a risotto is by using blanched risotto rice. Arborio rice will take 20 minutes to cook from scratch. So blanching the rice for 8 minutes beforehand means the cooking time is reduced.

Ingredients

  1. Arborio rice
  2. Water or vegetable stock to blanch the rice

Blanching The Risotto Rice

  1. Bring the water to the boil
  2. Add the rice, and allow plenty of room for the rice to move around
  3. Cook for 8 minutes and drain in a colander
  4. Place the arborio rice in the fridge and chill before needed
