Courgette Soup

There is a range of courgettes out there, green courgettes are great for soups. These vegetables can be found in most supermarkets as standard. This soup is really quick to make in under 10 minutes with minimal ingredients. 


  1. Spanish Onion x 1
  2. Garlic Cloves x 2
  3. Green Courgette x 1 Large (300g)
  4. Vegetable Stock x 400 ml – Freshly made or a stock cube dissolved in hot water

Preparing And Cooking The courgette Soup

Preparing The Vegetables

  1. Peel the onion and cut it into a chunky dice
  2. The cloves need to be peeled and sliced 
  3. The courgettes need to be washed really well, cut in half and chunky diced
  4. Vegetable Stock x 400 ml 

Cooking The Vegetables 

  1. Heat the pan up on medium heat and drop in a splash of oil
  2. Cook the onions for 2 minutes until translucent in colour
  3. Stir in the garlic and cook for 1 minute
  4. Add the courgettes and stir occasionally for 4 minutes
  5. Pour in the vegetable stock, bring to a boil and simmer for 8 minutes

Finishing The Soup

  • Once the vegetables are cooked and soft take the pan off the heat
  • Blitz the soup to a smooth consistency
  • Check the taste and add salt and pepper as needed
