White Onion Soup

White onion soup is a simple soup with minimal ingredients. The cooking is a fairly long process to cook the onions on low heat. 


  1. Spanish Onions x 5 Medium 
  2. Potato x 1 medium Sized
  3. Butter x 1 Tablespoon
  4. Vegetable Stock x 500 ml (Freshly Made Or Stock Cube Dissolved In Water)
  5. Chive Oil
  6. Double Cream x 100 ml

Preparing And Cooking My White Onion Soup

Preparing The Vegetables

  1. Peel the Spanish onions, cut them in half and slice all
  2. Peel the potato and cut it into small slices
  3. Make up the vegetable stock (fresh or stock cube)
  4. Chive oil ready

Slow Cooking The Onions And Vegetables

  1. Heat the pan to medium heat add a little oil and the butter
  2. Cook the onions slowly on medium heat, no colour for 30 minutes
  3. Add a little salt and the sugar
  4. The onions will become soft with a little colour and the sweetness will come out
  5. Add in the potato and cook for a minute
  6. Pour in the vegetable stock, bring to a boil and simmer for 10 minutes
  7. Add the cream and boil for 5 minutes

Finishing The White Onion Soup

  • Once the vegetables are well cooked, take the soup off the heat 
  • Blitz the soup to a smooth consistency and pass it through a strainer
  • Drizzle a little chive oil over the top
